  • To begin the wat, saute your chopped red onion in some olive oil.
  • After that's softened, add your peeled and chopped carrots and potatoes.
  • When all that's soft, add as much garlic as you like along with the ginger and whatever proportion of the spices that you feel appropriate and the tomato paste. This can be tailored to individual taste as much as you want. I used probably 1 tablespoon of paprika, one of ancho powder, a teaspoon of cumin, and some unmeasured amount of salt and pepper.
  • After letting this get hot for a couple of minutes, add the drained and rinsed chickpeas and enough water to not quite cover.
  • Bring to a boil and let simmer. It should be fine whenever the rest of supper is ready - half an hour won't make a difference either way, as long as it's hot. But the longer it stews the better the flavours get.
