Delicious stuff! It would be really good (but no longer vegan) to add some ham or bacon...
Ingredients
- 5 cups of water
- 1 1/2 cups dried split peas (yellow or green work fine)
- 2 bay leaves
- a teaspoon of salt
- 2 cloves of garlic, minced
- a teaspoon of celery seed (or if you like celery, which i don't particularly, just use one stalk of celery, chopped)
- one large carrot, sliced (i usually use two or three, or a bunch of baby carrots--but i really love carrots . . .)
- one medium yellow onion, chopped
- 1 teaspoon marjoram
- 1 teaspoon basil
- 1 teaspoon cumin
Directions
- Put all ingredients in a big pot.
- let it cook for about 45 minutes to an hour. stir it about every 10-15 minutes. you may need to add more water to avoid burning, as the peas absorb a lot of it and it gets very thick pretty quickly--just keep an eye on it.
- then taste it, make sure it's the thickness you like, and eat! it keeps well in the fridge (although it thickens up to a right paste when it sits and gets cold). so if you put some away, just know that it will look weird when you pull it out to eat it. but once it's heated again, it melts back down and is perfect. (sometimes i add a little water to leftovers just so it's not sososo thick.
- Freezes well!
