Ingredients
- Beef Pho stock
- 10lb. beef bones
- 1 teaspoon sea salt
- 2-inch piece fresh ginger
- 3 medium yellow onions
- 2 star anise seeds
- 6 cloves
- 1 teaspoon black peppercorns
- 1 stick cinnamon
- 5 cardamom pods
- 2 tablespoons fish sauce
- Beef pho soup
- 1-inch knob fresh ginger
- 1/4 cup brown or pink shallots
- 6 cups beef pho stock
- 1 star anise
- 1 borwn or black cardamom pod, lightly crushed
- 1-lb packet rice noodles or rice sticks
- 2 tablespoons coarsly chopped Chinese chives
- 2 scallions, including green parts.
- 1 small onion, thinly sliced
- 6 oz sliced beef of some kind. Whatever you have.
Directions
For the stock:
- Grill ginger and onions until outer layers are burnt and soft. Remove and discard burnt outer layer. Roast star anise seeds in a pan.
- Chuck all the stuff in a pot, cover with cold water, simmer for 3-4 hours. Discard solids, skim any residue.
For the soup:
- Preheat oven to 400 deg. Enclose ginger and shallots in am aluminum foil pouch, roast for 20 minutes. Chop, add to stockpot with stock, anise and cardamom. Reduce heat to low and simmer for 30 minutes.
- Prepare noodles.
- Immediatly prior to serving, remove anise and cardamom, bring stock to a boil. Add noodles to stock to reheat. Place noodles in bowls. Add meat to boiling stock. Ladle meat and stock into bowls.
