Ingredients
- At least 3 Cups Chicken Stock (or Vegetable Stock, or water)
- 1 onion, finely diced
- 3 cloves of garlic, minced
- about 1 tsp of grated ginger
- 1 sweet potato, peeled and diced (or about 1/3 of a butternut squash, peeled and diced)
- 1/2 - 3/4 cup of Red Lentils
- 1-2 tsp Olive Oil
- 1-2 tbsp Curry powder
- Salt, Pepper, Hot Peppers, spices or Hot Sauce to taste.
Directions
- Heat your oil over medium-high heat and add the curry powder and whatever spices. Cook until they're fragrant.
- Reduce the heat slightly and add the diced onion and sweat for a minute or two, then add the garlic and ginger and cook them for another minute or two.
- Add the stock/water, diced squash/sweet potato, and lentils. Cover the pot and let it simmer for at least 25 minutes, or until tender.
- When the vegetables and lentils are tender, blend it all up with a stick blender until smooth and adjust the seasonings and thickness.
