One of my favorite things to make for breakfast
Directions
- Place butter (or margarine) in a 3 or 4 quart round or oval shallow baking dish (a 9” glass pie pan is good) and set in a 425 degree oven.
- Meanwhile, in a blender (or with mixer), mix eggs at high speed one minute til well blended. While blender is on low add milk and flour and mix at high speed for one minute.
- Remove pan from oven when butter is melted and spread it around to cover bottom of pan. Quickly pour in batter. Return pan to oven and bake for 20 to 25 minutes til pancake is puffy and golden brown.
- Cut into wedges and serve immediately. Serve with powdered sugar and lemon wedges. (Or, with syrup, warm honey, sliced fruit, or sauteed apples and sour cream.)
- You may cut the recipe in half or double it. It may take a little longer to cook for the larger recipe.
Tips
- Fancy apple version: Peal and thinly slice one Granny Smith apple. Mix with 2 tablespoons sugar, 1/4 teaspoon cinnamon. Arrange in bottom of pie pan after butter is melted and before you pour in the batter. Bake as directed.
