Mom's Smoked Paprika Stew

Mom made this stew for me when I was undergoing radioactive iodine therapy for my thyroid. It was delicious!
Ingredients
1 1/2 - 2
lbs
stew
meat or short ribs, cut into 2-bite chunks
3 large
potatoes
, cubed
6
carrots
, cut into chunks
1
onion
, chopped
1 clove
garlic
, chopped
2
tomatoes
or 1 can diced
tomatoes
1/3
cup
flour
1
teaspoon
salt
3
teaspoons
smoked
paprika
ground
pepper
1 bottle dark
beer
2
tablespoons
olive oil
Directions
Mix
flour
,
paprika
,
salt
,
pepper
. Dredge meat in
flour
. Brown meat in
olive oil
. Remove meat. Add
onions
&
garlic
. Brown slightly. Add
tomatoes
and
beer
. Put meat back in and mix. Cover and bake at 300F for 2 hours. Add
carrots
&
potatoes
. Bake 2 more hours.
Tips
Brown the meat till it's really brown!
If you cook it in a crock pot, leave the lid off for a while so the liquid thickens.
If it's too bland, add more
salt
(and maybe
pepper
).
